The Simple Beauty of Whole Foods

Many Americans subsist on highly processed, artificial foodstuffs. The present writer is no exception to this generalization. But there is nothing inherently evil about some of our foods being processed. The milk we drink is often fortified with vitamin D. Some of the canned fruits we eat are merely packed in water or their own juices. Quality fruits and vegetables can come in convenient bags that cost the consumer a bit more money (understandably), but are often minimally processed and thus have roughly the same nutritional value as a comparable fresh product. Food processing can definitely be beneficial to the consumer.

But some of the food products we consume are so heavily processed that they are rendered nearly devoid of nutritional value (if any such value existed in the first place, soft drinks being the chief suspects here). Pure, simple grains and herbs are stripped of some of their most nutritious elements and are adulterated with dubious chemicals, additives, and preservatives. And we spend most of our money on such impure products. According to the U.S. Bureau of Labor Statistics, of all the money spent on groceries in 2012, we spent 22.9% on processed foods and sweets, which for that year was the highest percentage spent in one category of groceries, beating Fruits and Vegetables by 8.3% and Grains and Baked Goods by 8.5%.

Americans eat unhealthy processed foods more willingly than they should. There are beautiful whole foods that are available for our consumption if we will but seek them out. There are simple, pure grains like brown rice, quinoa, barley, and oats. There are fresh fruits and vegetables like apples, oranges, tomatoes, berries, potatoes, peppers, broccoli, and asparagus. And best of all, these rich earth-foods can be found at local farmers' markets, if not at average grocery stores.
